Genomics of tailless bacteriophages in a complex lactic acid bacteria starter culture

چکیده

Our previous study on a model microbial community originating from an artisanal cheese fermentation starter revealed that bacteriophages not only co-exist with bacteria but also are highly abundant. Here we describe the genomic content of phage particles released by 6 different strains in culture. The identified prophages belong to three subgroups Siphoviridae P335 group. Remarkably, most analysed show disruptions tail encoding genes, explaining common tailless phenotype. Furthermore, number potentially beneficial features for host carried were identified. carry up 3 defence systems per genome functional protecting foreign infection. We suggest presumably defective result bacteria-phage coevolution and could convey advantages bacteria.

Comparative genomics of the lactic acid bacteria.

Lactic acid-producing bacteria are associated with various plant and animal niches and play a key role in the production of fermented foods and beverages. We report nine genome sequences representing the phylogenetic and functional diversity of these bacteria. The small genomes of lactic acid bacteria encode a broad repertoire of transporters for efficient carbon and nitrogen acquisition from t...

Evolutionary genomics of lactic acid bacteria.

The lactic acid bacteria (LAB) might be the most numerous group of bacteria linked to humans. They are naturally associated with mucosal surfaces, particularly the gastrointestinal tract, and are also indigenous to food-related habitats, including plant (fruits, vegetables, and cereal grains), wine, milk, and meat environments (60, 61). The LAB include both important pathogens, e.g., several St...

Assessment of the Potential of Lactic Acid Bacteria as Dried Starter Culture for Cereal Fermentation

The kinetic growth parameters [maximal specific growth rate μm (h ), and generation time g (h)] and viability after stress treatments (dehydration with glycerol solution of increasing concentration, freezing or heating stress) of four lactic acid bacteria [Lactobacillus plantarum (LP), L. fermentum (LF), Leuconostoc spp. (M1) and Lactococcus spp. (M2)] were determined. The maximal specific grow...

Lactic acid bacteria: life after genomics

As powerhouses for the food industry, lactic acid bacteria continue to be the focus of considerable interest. While traditionally applied in industrial dairy and other food fermentations, lactic acid bacteria are now used in a great variety of drinks, yoghurts or other products that are marketed with specific health benefits. This has been the largest growth segment in the functional foods mark...

Temperate bacteriophages and lysogeny in lactic acid bacteria.

Lysogeny is widespread in the lactic acid bacteria. The majority of lysogens can be induced by UV irradiation or treatment with mitomycin C, but indicator strains which allow lytic growth of the induced phage are often not easy to identify. A few temperate phages have been shown to transduce chromosomal and/or plasmid markers. Information about the molecular biology of the temperate phages from...
